TERROIR : At the foot of the Vercors range along the Drôme river, on its rocky and steep slopes – among the highest in France – our vineyard enjoys a sharply contrasted climate. Severe winters and dry summers mould its flamboyant features under the bright sunshine of Provence.
SOIL : Clay-limestone
GRAPE VARIETY : 85% Clairette Blanche, 15% Aligoté
WINE-MAKING PROCESS : Entirely gathered by hand, this Crémant de Die Brut Nature is made using the Traditional Method. After an initial fermentation in tanks, the wine is bottled and the addition of a tirage liqueur made of sugars and selected yeasts triggers off a second fermentation. The maturing process takes places at our warehouse located at 539m. This cuvee has been aged for 12 years on lees before the removal of sediments by freezing bottlenecks and disgorging. We decided to not add any dosage and to keep it Brut Nature.
COLOUR : Beautiful pale yellow colour with green reflections
BOUQUET : A very expressive nose, with notes of lightly toasted bread, followed by notes of almonds and white flowers.
PALATE : Dry attack with good tension, aromas of dried fruit and roasting, good length, expressive and complex wine.
FOOD & WINE PAIRING : To be enjoyed chilled as an aperitif, this wine can also accompany an entire meal (fish and white meats).
